In February, Grand Hotel Union hosted a yearly premium culinary event of sea and fresh water delights. The 91st Herring Fest, the event with an exceptionally long tradition, served culinary creations inspired by Ljubljana – European Green Capital 2016 and attracted gourmets from Slovenia and abroad.
The herring feast is a proper culinary fest for all lovers of Lenten dishes, who can here indulge in fish, seafood and other fine culinary treats. It has been held at the Union Hall since 1908, starting annually in 1925 when a culinary exhibition was added to the event. Nowadays the tradition still lives on at the Grand Hotel Union and the 91st Herring Feast was as special as the first one.
Last year, more than 1800 guests from all over Slovenia attended the Herring feast and this year was no different. The inspiration for the concept of the 91st Herring Feast came from Ljubljana, being the European Green Capital of 2016. Union hotels’ chefs have prepared 5 superb menus that were served at different locations; The Grand Union Hall, The Grand Foyer, Lounge Bar and The Green Room, The Blue Room and at the restaurant of Grand Union Hotel. They also offered a take away menu for those who wanted to treat their loved ones at home.
New in 2016 was a four-course Gala Herring Menu. The culinary creations included in the menu were one-of-a-kind and a real feast for the taste buds. As a cold starter one could taste “Three cigars”, a dish based on scallops, Tuna fish and sturgeon. To warm up, the chefs extraordinaire have prepared poached squid with garlic cream, compressed cucumber, parsley oil, black redish and dashi. The main dish was made of halibut, topinambur and truffles, while the dessert impressed with stones on undergrowth in harmony of fennel, tangerine and chocolate. The menu was completed with a selection of one of the best wines. The feast that was accompanied by music played by Quarter to jazz was not only a culinary spectacle but also a real treat for the eyes.
